new recipe, yum!

Bryson and I have been watching the Today show every morning. I saw these on the cooking segment, and they looked pretty good. They were really easy to make, and have been a big hit- so I thought I'd share the recipe!







Orange Juice Balls
INGREDIENTS
• 3/4 box powdered sugar
• 1 stick of butter, melted
• 1 pound box vanilla wafers
• 1 6-ounce can frozen orange juice
• chopped nuts
• shredded coconut
extra powdered sugar (to roll 'em in)



DIRECTIONS
Crush vanilla wafers in a food processor or blender to make fine crumbs. Add all other ingredients and mix with your hands. Form into balls and roll in powdered sugar, or nuts or coconut. Refrigerate to set. Store in refrigerator.
(these cookies would be really easy to make with children too!)

Those are my husband's favorite! His mom gave me her recipe a few years ago. We make those every year! Mine doesn't use as much sugar, but they are PLENTY sweet! My husband prefers that we hand-crush the wafers to give them more texture...I like the pulverize pieces!

Orange Balls:
12oz Nilla Wafers, crushed (one box is 12 oz)
1 Stick of Butter, softened
1 Cup Powdered Sugar
1 tsp Vanilla
1/2 Cup Frozen OJ concentrate, thawed
Additional sifted powdered sugar for coating the finished cookies.

Crush Wafers and mix with powdered sugar. Cut in the butter and then add in Vanilla and OJ. Form into balls. Roll in powdered sugar and then refrigerate overnight.
